SPAGHETTI WITH FRESH FAVA BEANS CREAM, WILD FENNEL, SAFFRON, MINT AND PECORINO SICILIANO PDO

A dish that starts from the season flavors, enhanced by a sprinkling of Pecorino PDO Zappalà: Spaghetti with fresh fava beans cream, wild fennel, saffron, mint and Pecorino Siciliano PDO, cooked by the chef Lina Castorina.

The Pecorino PDO belongs to the Sicilian tradition and is prepared according to the most ancient methods to bring to the table the real territorial history. Made of cow’s milk from bovine breed raised in Modica, it is seasoned for 3 to 6 months. The taste is spicy in the first months of maturation, then it acquires greater consistency in the following months. Therefore, this cheese can be enjoyed not only on its own, but it can enriche or even become the main ingredient of gourmet dishes, such as in this video-recipe!
