
AGED RAGUSANO – WHOLE OR 1/4 OF SHAPE

Made of cow’s milk from bovine breed raised in Modica and feeded with natural fodder (of spontaneous essences from the Hyblean plateau). Seasoned for 3 to 6 months. The crust is smooth, thin but compact. The color of the pasta goes from golden yellow to straw yellow. Slightly spicy in the first months of seasoning, and therefore it is perfect to be tasted on its own. Then the flavor is accentuated in the following months, and therefore it is used as grated cheese.
